North Mountain Pippin Smoked Prawns

Ingredients:
1.5 Lbs Prawns or Shrimp - Raw, Peeled, Deveined, Tail-on.

Dry Rub
2 Tbls. Garlic Powder
2 Tsps. Coarse Sea Salt
1 Tbls. Brown Sugar
2 Tsps. Onion Powder
2 Tbls. Chili Powder
Combine Dry Rub Ingredients in small food processor; Grind together quickly to chop the sea salt and mix. Set aside.

Marinade
12 Oz. Beer (Your Favorite)
4 Oz. North Mountain Pippin Spiced Apple Wine
2 Tbls. chopped garlic
2 Tbls. Honey
2 Tbls. Worcestershire Sauce
2 Tbls. Extra Virgin Olive Oil
2 Tbls. Dry Rub (above)

Preparation:
Wash & drain shrimp then place shrimp in 1 Gal. Zip Lock Bag. Add all marinade ingredients, squeeze the air out of the bag and zip shut; toss to mix and coat thoroughly. Refrigerate for at least 3 hours, but preferably over night. Drain shrimp, discard marinade, put shrimp in clean Gal. freezer bag and toss with remaining Dry Rub. Skewer shrimp well spaced and hot smoke over hickory with beer in steam pan until just done - 15-20 min.
